Setting out to bring a Sinaloa-style hot dog concept to Fort Collins, Entrepreneur Estafania Lugo had food truck fantasies. The vision was clear; the path from idea to first sale—permits, health approvals, inspections, and timing across agencies—was less so.

With permits in hand, inspections completed and approvals gained, Estafania traded paperwork for paying customers and El Maviri is now fully open and operational!
